Fried Chicken Sliders

These delicious fried chicken sliders are cooked until golden brown, topped with homemade pickles and nestled into a slider bun for the perfect bite of comfort food!

Fried Chicken SlidersFried Chicken Sliders.  These don’t really need any sort of introduction or story but for the sake of this blog, humor me.

These aren’t any fried chicken sliders.  These feature homemade pickles, which are to die for and will have you making your own all the time now.  It also has a delicious mustard bbq sauce which is pretty awesome too.

Fried Chicken SlidersI do not make fried chicken often, or eat it very often for that matter, but when I was tasked with making a #Footballfood and a slider recipe, fried chicken was the first thing that came to mind and my husband wasn’t arguing.  Neither was I.

Now these fried chicken sliders do take a little bit of work, but it’s all prep work the night before and it’s easy peasy and definitely worth it.

Fried Chicken SliderThe chicken needs to marinade in buttermilk, overnight.  Buttermilk tenderizes the meat so don’t leave this step out.  Just throw all of the ingredients into a bag and place into the fridge. Simple.

You’ll also need to make the pickles the night before so they have time to sit in their brine and soak up all those delicious flavors.  And must I say again, these.are.amazing.

Once all of the prep work is done the night before, you’re ready to make your fried chicken sliders.

These delicious fried chicken sliders are cooked until golden brown, topped with homemade pickles and nestled into a slider bun for the perfect bite of comfort food!

Ingredients

Marinated Chicken

4 chicken cutlets, cut into 3 pieces for a total of 12 pieces

1/2 teaspoon salt

1/4 teaspoon pepper

1 tablespoon hot sauce

1/2 cup buttermilk

Homemade Pickles

2 cucumbers, thinly sliced (about into 1/4" thick)

3/4 teaspoon kosher salt

1/2 cup onions, sliced thinly

1/2 cup granulated sugar

1/2 cup white vinegar

1/4 cup apple cider vinegar

1 teaspoon mustard seeds

1/4 teaspoon celery seeds

1/4 teaspoon red chili flakes

1 bay leaf

Mustard BBQ Sauce

3/4 cup yellow mustard

1/2 cup brown sugar

1/4 cup white vinegar

1 tablespoon unsalted butter

1/2 teaspoon hot sauce

1/2 teaspoon black pepper

Fried Chicken Sliders

1 cup vegetable oil

1 cup flour

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon paprika

12 Slider Buns

Instructions

Marinated Chicken

  1. Place chicken into a zip top bag.  Pour in marinade ingredients and marinate overnight.

Homemade Pickles

  1. Place cucumbers into a colander with kosher salt and allow to sit for 1 hour. Rinse and place into a large bowl with onions.
  2. In a medium saucepan, combine sugar, white vinegar, apple cider vinegar, mustard seeds, celery seeds and red chili flakes and bring to a simmer.  Cook until sugar is dissolved.
  3. Pour over cucumbers and onions and allow to sit at room temperature for 1 hour.  Cover and refrigerate overnight.

Mustard BBQ Sauce

  1. Combine all ingredients into a medium saucepan and bring to a simmer.
  2. Simmer for 20 minutes.

Fried Chicken

  1. Combine flour, salt, pepper and paprika into a shallow dish.
  2. Remove chicken pieces from marinade and place into flour mixture, coating each chicken piece thoroughly.
  3. Heat the vegetable oil in a medium heavy bottom pan until hot.  Working in batches, fry the chicken pieces until golden brown, about 3-4 minutes per side.

Assembly

  1. Place a piece of fried chicken onto the bottom of a slider bun.  Top with mustard BBQ sauce and a few homemade pickles.

*Homemade Pickles recipe slightly adapted from refrigerator bread and butter
