Slow Cooker Hash Brown Casserole

It’s time to talk all things Easter, which happens to be in 7 days, how is that even possible?  It snuck up on me so quickly and it’s because I lost a week of my life to what I’ve been calling “waterpark disease.”

I know, sounds disgusting right?  During Spring break, my sister, her girlfriend and I took the kids to a waterpark a few hours from our home for an overnight stay.  It was super fun and a great time to get away.  The morning. after we got back my sister texted me asking if everyone was well.  I replied, “yes.”  Little did I know I was sticking my foot in my mouth because my daughter got sick that very afternoon.

Every time we go to a water park my daughter ends up sick.  She’s always the first one.  Then, because my husband is a husband, he can’t clean up after said sickness. Therefore, I am the one who is playing nurse, cleaning all of the sheets, towels, clothes, etc.

Then, somehow husband is always next on the list to fall to the illness, followed by son.  Now, I’m serious when I say, every single time we go to a waterpark without fail the entire family ends up sick.  So, the weekend was spent with one kid sick, followed by husband and son in the beginning of the week and then mama fell to “waterpark disease” in the middle of the week.  Therefore, I lost a week of my life.  Good news is, we’re all well as of today and no plans to go to another water park until next Winter! ?

Which now brings us to Easter, something my daughter has been looking forward to since Valentine’s day.  She is so excited to look for eggs and wear her adorable dress and matching purse I bought her from Target.  Well this mama has yet to go Easter basket shopping so guess what I’ll be doing the week before Easter praying there’s a chocolate bunny left sitting on a shelf somewhere.  I am not a last-minute person and I’m slightly freaking out and oh yeah, she’s off school 2 days this week.  So when I usually have 4-6 hours of alone time to shop (oh, the freedom)  I don’t have that this week.  AND my husband is away on a business trip.  Hell is breaking loose people!

Deep breaths, at least I’ve got breakfast figured out for Easter morning.  This Slow Cooker Hash Brown Casserole is a family favorite and has been for years.  It’s SUPER simple I almost hate to call it a recipe, LOL.  It’s made with mostly ingredients you already have in your house and you place them all into the slow cooker and boom, breakfast, side dish, potluck is done.

Slow Cooker Hash Brown Casserole is also perfect for after Easter when you have all of that leftover ham.  Dice it up and throw it in.  I’m pretty sure I’ve never been to a potluck and not seen some sort of cheesy potatoes sitting on the table.  I love it because you can tailor it to your own taste.  Bacon would be delicious in here.  Instead of the corn flakes you could top it with panko.  Gotta have a little crunch to give all that cheesy, creaminess some texture.  However you serve it, everyone will be begging for the recipe and you’ll love how easy it was to prepare.

Slow Cooker Hash Brown Casserole

Yield 8 servings

What could be better than cheese and potatoes except for Slow Cooker Hash Brown Casserole!  Serve it for breakfast, as a side dish or Easter brunch and it’ll please the crowd. 

Ingredients

  • 1 can (10.75) cream of chicken soup, I used 98% fat free
  • 1 8-oz container sour cream, I used light
  • 16 ounces frozen, shredded hash brown potatoes
  • 8 oz diced ham
  • 8 oz sharp cheddar, cubed
  • ¼ cup onion, chopped
  • ¼ teaspoon black pepper
  • 1 cup cornflakes
  • 2 tablespoons butter, melted

Instructions

  1. Spray a slow cooker with cooking spray
  2. In a large bowl combine chicken soup through black pepper. Stir to combine.
  3. Pour into slow cooker and cook for 2 hours and 30 minutes.
  4. In a small bowl, mix together corn flake cereal and butter. Toss to combine and pour over casserole, in slow cooker.
  5. Cover and cook an additional 30 minutes.

Courses Breakfast

We are headed to the in-laws and I’ll be bringing this for breakfast so it’s one less thing my mother in law has to worry about.  Aside from that, we’ll be coloring eggs, hunting for eggs and eating our weight in deviled eggs.  Have an Egg-cellent Easter, everyone! ???? (I couldn’t resist)

    I love a good hashbrown casserole but I have never made it in the slow cooker. What a great idea to save some stove space.

    I never thought to make something like this in the slow cooker but it sounds like a great easy dish to me! And waterpark disease…ugh. I am pretty sure after one bout of that, I could not make myself set foot in a waterpark again! I am a wimp when it comes to being sick.

    Waterpark sickness sounds like no fun! I also have no idea how it is almost Easter time.. this year has flown by. Definitely a good time of year to pull out the slow cooker!

    Oh, poor you!! It’s never a good time to have a family sick but during spring break and now at Easter!! ?I have a feeling it will be a while before you go to a water park. Now, for your potatoes, they look great. You’ve got one dish down for Easter now you’ll have to find something else that’s quick and easy. Stay well!!!!

That’s strange that your family gets frequently sick after visiting a waterpark… so sorry to hear that you had a rough time at home. Your family must be feeling so lucky to have you around int hose times.

    Yikes! I hope next week is better for you. This month has been a bit hectic for me with moving houses and my son’s birthday party on Saturday. I havent even thought about food on Easter. This casserole sounds absolutely perfect.

    Happy Easter to you and your family. This casserole for the breakfast would make it even more exciting. What’s not to like in this casserole. It has the cheese and the potatoes and they are slow cooked together. Looks absolutely mouth watering!
