There’s just something about coconut that makes me feel like I’m on a tropical island surrounded by palm trees.  To me, that is bliss.

I just love that coconut can be paired with a variety of flavors and taste amazing.  It’s like everyone’s BFF.

Take these Skinny Raspberry Coconut Mojitos for example.  The Torani sugar-free raspberry syrup pairs perfectly with the coconut water and coconut rum to create a stunning and delicious (not to mention beautiful) cocktail.

As I said in my last cocktail post, I’m not into overly sweet drinks.  Hence, why I’m bringing you another skinny cocktail.  I like something with a little bit of sweetness and another element that really packs a punch and brings it over the top all while maintaining great flavor.

That’s where Torani syrups come in.  They have a wide variety of flavors that made with real, simple ingredients like pure cane sugar and natural flavors.

But let’s get back to these Skinny Raspberry Coconut Mojitos.  Lime and mint make me a happy girl.  The combination is light, refreshing and crisp.  I decided to pair these flavors with the Torani Sugar Free Raspberry syrup, coconut water and coconut rum.

This recipe is for a batch of raspberry coconut mojitos.  Therefore, the entire pitcher will make 8 servings which is perfect so you don’t have to play bartender all night long.

Not only are these Skinny Raspberry Coconut Mojitos delicious, they’re sugar-free and no one would know the difference.

I served these up last weekend while we had some friends over for some swimming and they received rave reviews.

Delicious raspberry paired with coconut, mint and lime, create these beautiful and delicious Skinny Raspberry Coconut Mojitos worthy of your next get together!

Ingredients

  • 1/2 cup lime juice
  • 17.5 ounces coconut water
  • 1 1/2 cups coconut rum
  • 1/2 cup Sugar Free Raspberry Torani Syrup
  • 1 liter Club Soda
  • Fresh raspberries and mint for garnish

Instructions

  1. Into a large pitcher, place lime juice, coconut water, coconut rum and Sugar Free Raspberry Torani Syrup.  Stir to combine.
  2. Slowly pour club soda into pitcher.  Add fresh raspberries and chopped mint if desired.
  3. Place a few frozen raspberries* into the bottom of a high ball glass and pour in Skinny Raspberries Mojitos.

*Cooks Tip:  Place raspberries on a sheet tray and pop into the freezer until frozen.  A delicious and easy way to avoid a watered down cocktail!

These Skinny Raspberry Coconut Mojitos are a beautiful hue of pink which would be perfect for a bridal shower or a baby shower.

You can also make them nonalcoholic by replacing the coconut rum with additional coconut water.
