It’s cookiepalooza around here this week and I’m just giddy about it.  I’ve been in the kitchen working away on 3 delicious cookie recipes you will want to make this holiday season.

Today I bring to you Peppermint Crinkle Cookies which truth be told, I had never made before and apparently I’m the only one.

I wanted them to be a little more festive so I added in some peppermint extract and it worked our perfectly!

Back to the Peppermint Crinkle Cookies.  I always debate for weeks what I am going to make for the cookie exchange.  What will people like, what will ship well and what am I familiar with enough that I know they’ll taste good.

Top all of those questions this year with the fact that I was on vacation for a week and then needed a few days of rest after that, in the middle of the event.  My brain was scrambling but finally I decided on Crinkle cookies but not just regular crinkle cookies, these Peppermint Crinkle Cookies.

They needed to have a little more holiday jazz to them so I used peppermint extract to bring the festiveness.

My first batch of cookies spread so much and looked nothing like crinkle cookies.  I had to go back to the drawing board and do a little tinkering.

I realized I was making the cookies too big and my oven was a little cooler than I had thought.  This is the importance of an oven thermometer.

Peppermint Crinkle Cookies

Peppermint Crinkle Cookies are delicious, chocolaty, minty bites of cookies suitable for the big guy himself! 

Ingredients

  • 4 ounces unsweetened cocoa
  • 1/2 cup shortening
  • 3 eggs, slightly beaten
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 2 cups all purpose flour
  • 1/2 cup powdered sugar

Instructions

  1. In a small saucepan, melt chocolate and shortening together.  Allow to cool for 15-20 minutes.
  2. In a large bowl, stir together eggs, sugar, baking powder, vanilla and peppermint extract.
  3. When the chocolate is cool, slowly whisk into the large bowl until just combined.
  4. Slowly fold in the flour until thoroughly combined.
  5. Chill the dough for 2 hours.  *Allow cookie dough to come to room temperature for 20 minutes before rolling and baking.
  6. Preheat oven to 375 degrees F and line a sheet pan with a Silpat or parchment paper.
  7. Shape dough into small, 1 inch balls, and roll into powdered sugar.  Place onto prepared sheet pan, 2 inches apart and bake for 9 minutes or until the edges are set.
  8. Cool on baking sheet for 10 minutes and then place onto a wire rack to cool completely.

    I love Nielson-Massey extracts. I have both almond and rose water in my cupboard right now. I’ll have to pick up some peppermint to make these cookies (as well as a few other holiday goodies).

    How is it that I’ve never made crinkle cookies? They’re so pretty, and there’s nothing to dislike here. Peppermint, chocolate, and covered in powdered sugar?! A serving of cookies is about 10, right?!
