Peppermint Crinkle Cookies are delicious, chocolaty, minty bites of cookies suitable for the big guy himself!
Ingredients
4 ounces unsweetened cocoa
1/2 cup shortening
3 eggs, slightly beaten
2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon vanilla extract
1 teaspoon peppermint extract
1/4 teaspoon salt
2 cups all purpose flour
1/2 cup powdered sugar
Instructions
In a small saucepan, melt chocolate and shortening together. Allow to cool for 15-20 minutes.
In a large bowl, stir together eggs, sugar, baking powder, vanilla and peppermint extract.
When the chocolate is cool, slowly whisk into the large bowl until just combined.
Slowly fold in the flour until thoroughly combined.
Chill the dough for 2 hours. *Allow cookie dough to come to room temperature for 20 minutes before rolling and baking.
Preheat oven to 375 degrees F and line a sheet pan with a Silpat or parchment paper.
Shape dough into small, 1 inch balls, and roll into powdered sugar. Place onto prepared sheet pan, 2 inches apart and bake for 9 minutes or until the edges are set.
Cool on baking sheet for 10 minutes and then place onto a wire rack to cool completely.
