  1. Soooooooooo… I’m not too terribly sad about summer ending. I love the summertime. Really, I do. But I live in Texas, and it’s been in the 100’s for most of the month, and I’m desperately over the heat. All my friends who live in the Midwest keep talking about how their summer is awesome, and I’m crazy jealous because it is unbearable here now. That being said, our winters in Texas are nowhere near as intense as the ones y’all experience in the Midwest, so it’s a trade-off. Maybe I need to summer where you are? Hmm. Food for thought.

    These little cheesecakes are adorable, and they look like the best way to transport yourself to the tropics if you don’t have a plane ticket. I love that food can take us somewhere else, and I’m absolutely gonna have to give these a try because I haven’t been to the beach in ages!

    • I hear ya, I can’t imagine! This summer has been great but usually we’re swimming in humidity. I went to TX for the first time this spring, and we loved it! What a gorgeous and fun city Austin is! I’d love to come live there in the winter! Thanks for stopping by and I hope you guys have some relief from the intense heat soon.   2. Dear Megan – I absolutely LOVE your little key lime summer desserts. They are so cute and I love anything key lime. I just bought some key lime flavoring oil but I see that is NOT what is needed here. Fresh lime juice. Woo hoo!!! Enjoy what’s left of your summer. I feel your pain on the snow issue. In NH we had 90+ inches of snow last year. But that was nothin’. Just south, Boston had 108″. So I’m not exactly complaining. Well kinda sorta. (I just don’t want Mother Nature to hear me and punish me for complaining come December…) Can’t wait to try your awesome little cheesecakes!

    • Thanks so much Alli! Where did you find key lime flavoring? I searched all my local grocery stores and couldn’t find key lime anything 🙁 Ugh, winter, let’s just pretend it’s not coming at all this year and eat Key Lime Pie Cheesecakes until our bellies hurt (LOL)! Oh and bring some of that delicious looking wild blueberry ice cream, PLEASE!

  3. Lime is one of my fav ingredients too – it can elevate the flavors of any dish to another level. We still don’t have Key Lime Oreos available in the Middle East but I shall be tweaking your recipe with usual oreos in my next tea party! Thanks for sharing 🙂

  5. Ha! We’re such kindred spirits! I *LOATHE* cold weather, and I’d lose my mind if I had to function in the snow! Luckily for me, I grew up and live in the south so I don’t have too much to worry about there. If there is even an indication of a snow flake falling to the ground they close all the schools and shut down the bridges! Also, using Key Lime oreos for the base of these?!? Genius!

  7. These are so darn cute!! Love everything about them. Key Lime is one of my all time favorite flavors! By the way..I used to live in South Dakota, so I absolutely know what you mean about the cold. Now I’m in Texas, and would love to have just a little of the coolness back right about now!
