Ice cream season is the BEST season of the year, don’t you agree?

We eat ice cream all year long but there’s something about the summer sun and the ice cream dripping down your hand that makes the ice cream taste that much sweeter.

And there’s nothing better than the surprise chocolate at the bottom.

My family is all about sweet treats in the summer to help us cool down and homemade dipped ice cream cones top the list.

I love nothing more than pulling through the drive thru for a cherry dipped vanilla cone.

Now I’m bringing the same notion home with these ice cream drumsticks.

While recently shopping at Jewel-Osco, I spotted Open Nature® Scandal-less light ice cream products in a variety of irresistibly delicious flavors.

The kids helped me and after much pondering, we finally decided on Birthday cake, Vanilla and Sea-Salt Caramel.

It’s super easy to make your own drumsticks at home with these ingredients

  • Open Nature® Scandal-less light ice cream in 3 flavors
  • sugar ice cream cones
  • sprinkles
  • sugar free chocolate chips
  • peanuts
  • sea salt

How to:

For Birthday cake dipped cones

  • Start melting chocolate in the microwave, in a heat safe bowl, in 30 second increments, stirring between making sure not to melt.
  • Drizzle melted chocolate into the bottom of the cone and swirling it around to coat the entire inside of the cone. Allow to set for a few minutes.

  • With a spoon, place birthday cake ice cream into the bottom of the cone and smooth the top.
  • Using a cookie scoop, scoop the ice cream onto the top of the cone.
  • Place into the freezer to freeze for at least 1 hour or until harden.
  • Working one at a time, remove the cone from the freezer and spoon over melted chocolate smoothing to coat the entire top. Immediately sprinkle with sprinkles and place back into the freezer to harden, 1 more hour.

For vanilla dipped cones

  • Start melting chocolate in the microwave, in a heat safe bowl, in 30 second increments, stirring between making sure not to melt.
  • Drizzle melted chocolate into the bottom of the cone and swirling it around to coat the entire inside of the cone. Allow to set for a few minutes.
  • With a spoon, place vanilla ice cream into the bottom of the cone and smooth the top.
  • Using a cookie scoop, scoop the ice cream onto the top of the cone.
  • Place into the freezer to freeze for at least 1 hour or until harden.
  • Working one at a time, remove the cone from the freezer and spoon over melted chocolate smoothing to coat the entire top. Immediately sprinkle with peanuts and place back into the freezer to harden, 1 more hour.

For Sea Salt Caramel dipped cones

  • Start melting chocolate in the microwave, in a heat safe bowl, in 30 second increments, stirring between making sure not to melt.
  • Drizzle melted chocolate into the bottom of the cone and swirling it around to coat the entire inside of the cone. Allow to set for a few minutes.
  • With a spoon, place sea salt caramel ice cream into the bottom of the cone and smooth the top.
  • Using a cookie scoop, scoop the ice cream onto the top of the cone.
  • Place into the freezer to freeze for at least 1 hour or until harden.
  • Working one at a time, remove the cone from the freezer and spoon over melted chocolate smoothing to coat the entire top. Immediately sprinkle with sea salt and place back into the freezer to harden, 1 more hour.

Sugar Free chocolate chips

I used semi sweet sugar free chocolate chips, made with stevia, to keep these cones on the lighter side*. However, feel free to use milk chocolate chips, dark chocolate chips or any chopped chocolate of your choice.

You could even use white almond bark for a white chocolate version.

Tips and Tricks

Standing up the cones

I placed the sprinkles, chocolate chips and some sea salt into the bottom of small glass jars, however, you can use rice, in to the bottom of small mason jars to keep the cones upright while filling them with melted chocolate and ice cream.

Freezing the ice cream

Light ice cream doesn’t freeze as solid as regular ice cream so you have to work quickly and make them one at a time to ensure proper freezing.

I noticed the sea salt caramel was softer than the others and a tad bit trickier to work with.

Serving Size

I made 2 cones for each type of ice cream flavor but there is plenty of ice cream in the pint to make at least 6 cones.

Our entire family devoured these skinny drumsticks and yours will too!

Ingredients

  • Open Nature® Scandal-less light ice cream in 3 flavors, of choice
  • 1 (9oz bag) sugar free chocolate chips
  • 6 Sugar ice cream cones
  • 1/4 cup sprinkles
  • 1/4 cup salted peanuts, chopped
  • 1/4 teaspoon sea salt

Instructions

For Birthday Cake Dipped Cones

  1. Start melting chocolate in the microwave, in a heat safe bowl, in 30 second increments, stirring between making sure not to melt. 
  2. Drizzle melted chocolate into the bottom of the cone and swirling it around to coat the entire inside of the cone.  Allow to set for a few minutes.

  4. Using a cookie scoop, scoop the ice cream onto the top of the cone.
