The air is crisp, the leaves are falling and the temperatures have dropped into the 70’s. My pinterest account is filling up with delicious appetizers which can only mean one thing- it’s football season!
Fall is the time to get outside, throw around the Football and get down on some delicious food all while watching the game and hanging with your coolest friends. Luckily, almost every weekend, we do all 3!
Break out those jerseys and let’s get cooking. I’ve said a thousand times before, we are HUGE football fans. As soon as our team doesn’t make the baseball playoffs (again!) we’re in full pigskin mode. So here we are! and her is this fabulous Chorizo Queso Fundido in all it’s glory! Psst.. you’re going to want to make this….this WEEKEND!
Within the last 2 years, my husband and I have joined our local Moose lodge where we have met some of the most wonderful people we’ve ever known. Some of our greatest friendships have come out of this organization and we couldn’t be more thankful. Many of our long time friends have also joined so it’s another place we gather on many weekends!
We hold SUPER fun events there, as I’m the “community service” chairman, I like to bring in fun activities for all ages. Recently, we had a tailgate in the parking lot. We all brought food, played a few games of bags and enjoyed the wonderful weather outside. We’re at the Moose so often, like a second home, so this was almost like home-gating to us.
I brought this Chorizo Queso Fundido and some of our favorite bottles of hot sauce, El Yucateco® in case anyone wanted to make this dip a little more spicy and extra flavorful but this dip already has all of that going on. It’s delicious and cheesy so it’s perfect for game watching and drinking a brewski to go alongside.
I usually grab a few bottles of El Yucateco® while shopping at Walmart but you can purchase them at any retailer of your choice
I discovered El Yucateco® a few years back when I made this Slow Cooker Spicy Pork Carnitas, which are bomb.com, try them. I used the hot sauce again when I made these Short Rib Sandwiches, which are also perfect for game day. Do you see what I’m getting at here? Your game day isn’t complete with El Yucateco® so grab a few bottles.
El Yucateco® has rose to one of my favorite hot sauces. So much so, that I stick a bottle in my purse for when we’re hot. What?! I do the same thing with salad dressings. I’m a foodie and I can’t risk what might be at the table when I get to a restaurant. So judge me, but I promise, you’ll do it too!

Chorizo Queso Fundido
Yield 8 servings
Chorizo Queso Fundido is a delicious and flavorful dip filled with cheeses, chorizo, tequila and El Yucateco® hot sauce. It's the perfect appetizer for game day and everything in between!
- 12 ounces chorizo
- 1/2 cup onion, diced
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 3 garlic cloves, minced
- 1/4 cup El Yucateco® Green Chile Habanero
- 1/4 cup tequila
- 7 ounces Chihuahua cheese, divided
- 1/4 cup sharp cheddar cheese, shredded
- 1/4 cup pepperjack cheese, shredded
- 3 roma tomatoes, diced
- 2 tablespoons cilantro, chopped
- Corn chips, tortilla chips, bread cubes for dipping
- In a medium cast iron pan, add chorizo and cook until cripsy. Remove from pan and place onto a paper towel lined plate. Set aside.
- Add onions, pepper and garlic into pan drippings and saute for 3 minutes. Add chorizo back into pan and stir to combine.
- Remove pan from heat and stir in hot sauce and tequila. Place pan back onto the burner and simmer 2-3 minutes until thickened.
- Add half chihuahua cheese along with all sharp cheddar and pepperjack cheese.
- Top with remaining chihuahua cheese.
- Preheat broiler to high and place pan into oven. Carefully watch pan until cheese is melted and golden brown.
- Top with cilantro and roma tomatoes.
- Serve with Corn chips, tortilla chips, bread cubes for dipping and additional hot sauce if desired.
