The weather is cooling, the fantasy drafts have been chosen and we’re rocking our game day attire! This can only mean one thing:  It’s football season, y’all!

Who is ready for some FOOTBALL?!  I know we are!  We refer to game day as Sunday Funday around here and it’s the best day of the week.  Games, food and fun are flowing all day long around here and we couldn’t be more thrilled.

We love to mix up our game day spread each week and our newest addition was these Nacho drumsticks which were an absolute hit with the fans!

If one thing is for certain on game day is that there is also a spread to feed a crowd.   Chips, various salsas, appetizers and desserts can be found on a weekly basis.

We love to mix it up and bring something new to the table each week and most recently we made these Nacho drumsticks.  

While I was shopping at Walmart,  I picked up a big pack of drumsticks for dinner one night this week.  So, Saturday as I was looking through the fridge and scouring through the cabinets trying to figure out what game day recipe I could whip up, I spotted the 24 oz. Pace® Salsa Verde and figured I could combine the chicken and Pace® Salsa Verde.

I mean who doesn’t love a good piece of chicken with a little bit of kick on game day?  

For these Nacho drumsticks, we used drumsticks, but you could also use a bag of frozen chicken wings (thawed) and they’d be absolutely delicious as well.

We started by marinating the drumsticks in Pace® Salsa Verde.  We wanted to impart that genuine southwest flavor all throughout the chicken.  We like to do this the night before, so it can sit in the marinade for as long as possible.

Once the wings were done, we set up our breading station.  I always like to think of this acronym when trying to remember in which order the station should be set up; F.E.B (flour, egg, breadcrumb)

For the station, we had flour, egg and crushed nacho cheese chips.  We dunked the chicken through the station and then laid the pieces onto a wire rack inside of a cooking sheet and baked those babies until heated through.

When they were finished, we smothered some of them in 24 oz. Pace® Chunky Salsa Medium , to really drive home that southwest flavor, more cheesy goodness with some shredded cheese, jalapenos and some cilantro.

The tangy, slightly spicy kick of Pace® Salsa Verde combined with the crunchy chips and Pace® Chunky Salsa Medium was perfect.  Our friends loved them and begged for the recipe!  That’s when I know I’ve got a touchdown! ⬅️(Sorry I had to!) ???

Nacho Drumsticks

Ingredients

  • 4 lbs chicken drumsticks
  • 24 oz Pace® Salsa Verde
  • 1 ½ cups flour
  • 4 large eggs
  • 9.75 oz. Bag Nacho Cheese Flavored Tortilla Chips, finely crushed

Desired toppings Pace® Chunky Salsa Medium, grated cheese, jalapenos, cilantro

Instructions

  1. Into a gallon size bag, place chicken drumsticks and 2 cups of Pace® Salsa Verde.  Place into refrigerator to marinate 8 hours or overnight.
  2. Preheat oven to 400 degrees
  3. Place a wire rack inside a rimmed baking sheet and thoroughly spray with cooking spray.
  4. Set up your breading station.  Flour, egg and finely crushed nacho chips
  5. Grab a drumstick, dredge into the flour, then the egg and then roll around into the crushed chips to coat well.  Place onto wire rack.
  6. Spray drumsticks with cooking spray and place into the oven to bake for 30 minutes.
  7. Remove from oven and cover drumsticks with aluminum foil.  Place back into the oven and continue baking for 30 minutes or until a thermometer inserted into the chicken registers 165 degrees.
  8. When ready to serve, place drumsticks onto platter and top with desired toppings.

Have your chips, salsa and your chicken too all in one bite!  I envision making these Nacho drumsticks for the rest of the season and also for dinnertime.  I know my family will love the southwest flavor combination.
