I hope you’re ready for another sheet pan recipe. I’m soon to become the sheet pan queen. LOL, I’m just kidding…or am I? I’m a huge fan of one pan meals. Not only for the easy cleanup but how simple they are to put together. Throw everything onto a sheet pan and you’ve got a complete meal ready in less than 30 minutes. I’m already thinking of my next sheet pan dinner.

These days I’m running in one hundred different directions and when it comes to dinner time, I’m struggling to throw something together. I’m not even ashamed to admit I might have run through the drive thru a time or two last week, for the kids. In my defense, I was super sick, not only with strep but I must have gotten food poisoning when I went out to dinner with my mom. Figures, just as I start to eat again, I get ill. I.was.not.well.
As soon as I was feeling better and decided to make dinner, I choose these Sheet Pan Chicken Fajitas. Fast, simple, delicious and one pan cleanup, sounds like my kind of dinner. And Mexican food happens to be our favorite so these are a winner all around.
We always have bell peppers on hand. My daughter eats them like candy, no joke. I can’t make this stuff up. I am not sure how I got so lucky with the second child eating everything and being so brave to try something for the first time. We’re still working on the first child, one food at a time.
We also always have chicken and tortillas on hand; both corn and flour. I’m more of a corn tortilla girl, while the family prefers flour. I always char the tortillas a little bit over the flame of our gas stove. I’m also the girl who likes her chicken charred, so do what you’d like with the tortillas. Whichever you like choose will work great here. We load our Sheet Pan Chicken Fajitas with cheese, avocado, tomatoes and cilantro. Again, feel free to add whatever you like to these.
If you’re not in the mood to put your culinary thinking cap on, then these Sheet Pan Chicken Fajitas are perfect for you. They’re easy, delicious and there isn’t a crumb left, so don’t count on leftovers.
Sheet Pan Chicken Fajitas
Yield 4 (2 fajitas each)
Bursting with flavor and cooked all on ONE pan, these easy Sheet Pan Chicken Fajitas are sure to become permanent in your dinner rotation. You'll love the quick cleanup too!
- ¼ cup oil
- 3 tablespoons lime juice
- 2 tablespoons Worcestershire sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 4 cloves garlic, minced
- ½ teaspoon salt
- 1 large white onion, sliced
- 3 cups bell peppers, sliced (any combination of green, red, orange or yellow will work)
- 1lb boneless, skinless chicken breasts
- 8 tortillas (corn or flour)
- Desired toppings; avocado, pico de gallo, limes, cheese, cilantro, sour cream)
In a medium bowl, combine oil, through salt. Whisk to combine. Set aside ¼ cup of marinade.
On a large sheet pan, spread out peppers and onions into a single layer.
Pour ¼ cup marinade all over peppers and onions and toss to combine.
Place chicken breasts into the remaining marinade, in the bowl, and allow to marinade for 10 minutes.
Place chicken onto sheet pan with peppers and onions.
Set broiler to low and cook for 15 minutes.
Flip chicken over and cook for an additional 15 minutes.
When the chicken is cool enough to handle, slice.
Serve chicken, peppers and onions in tortillas with desired toppings.
