Like many others, shortly after we rang in the new year, my husband and I vowed to get healthy by eating better and renewing our gym membership.

It was also a time for me to change our eating habits. Since I’m the one who cooks dinner, I really needed to look at how we were eating and what we were putting into our bodies for nourishment.  Running through the drive thrus, frozen pizzas and all around eating crappy food had to stop.

Above everything else, we want to be role models for our small children and have them lead by example and what we were eating wasn’t working for us and it certainly wasn’t showing them how to live a healthier lifestyle either.

I’m also a busy mom, on the go, so while planning these healthier meals, I also had to find food to feed the family that would also be quick, especially on nights with gymnastics, boy scouts, etc.

I was delighted when I found these new Van de Kamp’s® Seafood and Veggie Meals at Walmart.  They’re located in the freezer section, packed with lean protein (11g – 26g per serving) and they steam right in your microwave!  Convenience meets healthy.  YES!

While at Walmart, I quickly grabbed the Lemon Herb Shrimp with Chickpeas, Sweet Potatoes, and Spinach but can’t wait to try these other varieties as well:

  • California Salmon with Peas, Yellow Carrots, and Sun-Dried Tomatoes
  • Baja Style Cod with Whole Grains, Black Beans, and Red Peppers
  • Garlic Herb Shrimp with Quinoa, Spinach, and Cranberries

I wouldn’t need to wait long to try the lemon shrimp as my son told me last-minute he had a boy scout meeting at 5:30 that same night.  Boy was I ever glad I had that Van de Kamp’s Seafood and Veggie Meal in the freezer!

The only thing that stood between us and dinner was a quick 7 minutes in the microwave and I could barely wait that long.

The smell wafting from the microwave was amazing and let me tell you the taste was even better!  The whole family loved the Lemon Herb Shrimp with Chickpeas, Sweet Potatoes, and Spinach and I was one happy mama!

The combination of sweet potatoes, the citrusy lemon and shrimp with the spinach was absolutely delicious.
