It’s August…how did that happen?  I feel like I was just telling my son he had 86 days off of school for summer break and today he has 19 days left. These next few weeks will be spent at the pool, traveling to Iowa to see our friends and eating ice cream for dinner.  We’ve already had our last t-ball game, swim lesson and gymnastics meet of the summer so it’s officially “do as many fun things as possible these last 2 weeks.”

I’ve yet to take my son our on school supply date as I’m having anxiety about my kids going back to school.  I’m just not ready to return back to a schedule. I enjoy the lazy days of summer, rolling out of bed whenever we’re good and ready and choosing the days activities on a whim.  In a few short weeks I’ll be up by 6:30, packing lunches, getting the kids dressed, backpacks packed and brushing teeth while running out the door so no one is late for the first bell’s ring.

On the other hand, I could look at it like I have more “me” time.  Once the kids are dropped off at school, I can return to the gym, clean my house and know it’ll stay clean for at least 6 hours, get my work done and get dinner on the table at a reasonable time and indulge in The Ultimate Ice Cream Sundae Bowl all by myself!  Maybe a schedule doesn’t sound so bad.

If you can believe this, there was a period of time where I thought I didn’t like ice cream.  I’m not sure if I really didn’t like it or if I just thought I was cool by saying it.  Regardless, I didn’t eat it for a few years.  Then I had kids and they love ice cream and I realized what I had been missing for years.

When I was a little girl my dad would take my sister and I up to the ice cream shop in town, “The Black Cow”  It was my favorite and I’d always choose the same thing, mint chocolate ice cream in a sugar cone.  To this day, mint chocolate ice cream is still my favorite but it’s gotta be green.  I’ve also recently found a healthy ice cream that’s actually good and who doesn’t love Ben & Jerry’s?!  Have you tried The Tonight Show dough?!  If not, do it and then do it again.

My kids love to help bake cookies and I love when they ask.  It’s a time for us to spend in the kitchen, together and it teaches them life skills.  Everyone should know how to make the perfect chocolate chip cookie.  But for times I don’t want to spend hours in the kitchen and have it look like a bomb blew up, there’s NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mix .  I was recently in Target and spotted them and immediately put them in my cart for a rainy day, which is our favorite day to bake.

I wasn’t sure which mix to get, as they have 4 new ones, so I have purchased them all. NESTLÉ® TOLL HOUSE® has it going on.  They’ve had the perfect chocolate chip cookie recipe on the back of their chip bags for over 75 years so they know a thing or two about baking.  There’s als no artificial flavors or colors (added colors from natural sources) which is an A+ in my book!

My kids were thrilled that the cookie and brownie mix had Butterfinger baking chips in them as they love Butterfingers!  I was thrilled because the baking mixes required everything I already had at home (butter, eggs and water)  I knew what our afternoon would be spent doing.

I had this idea to make ice cream bowls out of the cookies.  I make tortilla bowls all the time for salads, as shown here in the BBQ Steak Taco Bowls, so I figured I’d use the tortilla bowl maker to make a cookie bowl.

I made the NESTLÉ® TOLL HOUSE® Cookies & More with Butterfingers Baking Mix which as I said required butter, an egg and water.  I then chilled the dough for an hour and then pressed 1 cup of the dough into the bowl.  When doing so, make sure you press the dough up the sides and into the wells really good making sure it’s not too thin.

I baked the bowls for 10 minutes and then removed them from the oven so that I could spread out the dough a little more.  The center of the bowl was not cooking as fast as the sides so I scooped out a little of the dough a spread it a little thinner.  Then I placed it back into the oven for 5 more minutes and repeated the same smoothing out and removing a little dough and placed back in the oven for 5 more minutes.  Therefore, total these bowls were in the oven for 20 minutes.  I allowed them to cool completely and then gently flipped them over and tapped them on the counter.

Voila, out came the most deliciousNESTLÉ® TOLL HOUSE® Cookies & More with Butterfingers Baking Mix  Ice Cream bowl.  I filled the bowl with half a banana, Toasted S’mores and Peanut butter ice cream, whipped cream, sprinkles, Brownies & More with Butterfingers and a cherry on top.  This.this right here IS The Ultimate Ice Cream Sundae Bowl.  It was absolutely magnificent, a twist on your classic ice cream sundae and my kids flipped out!  They were so in shock that we could create a bowl out of cookie dough.

I love how simple this is.  Very minimal ingredients, preparation and cook time.  Also, there was dough left over so we bake a few cookies too which were gobbled up immediately.  All it took was a rainy day, 2 boxes of NESTLÉ® TOLL HOUSE® Cookies & More Cookie Baking Mixes and a little more than an hour of prep, cook and cook time.  AND the best part…YOU CAN EAT THE BOWL!

A delicious ice cream where I get to eat the bowl after? I’m ALL IN!

I’m totally with you on the whole schedule thing, I was literally just thinking last night that this summer came and went in the blink of an eye. I’m going to miss staying up until 3am just to wake up at 1pm (oh, the life)

I’m sure if I just make one of these ice cream bowls though, everything will be okay 🙂

I love the concept of edible ice cream bowls. My husband and I disagree about the best way to eat ice cream. I love cones and he goes for bowls. I think this is the perfect solution.
