Peanut Butter and Jelly Cups

Delicious peanut butter cups are swirled with strawberry fruit spread and topped with crunchy peanuts for the perfect snack!

The chaos from the holidays is over and my kids officially went back to school today.

So, it’s back to the daily grind.  Waking them up, getting them dressed and making sure their teeth are brushed before heading out the door.

It’s also time for me to get creative with packing their lunches again.

It can be so easy to get into a rut with the same ole and my daughter isn’t afraid to tell me when she’s tired of the same food every day.

So over Christmas break, we got creative with Jif® Creamy Peanut Butter and Smucker’s® Strawberry Fruit Spread and made these amazing Peanut Butter and Jelly Cups.

My daughter doesn’t love bread, but she loves peanut butter and jelly so when we decided to make these Peanut Butter and Jelly Cups I knew she would love them.

We headed out to Meijer to grab the supplies and straight into the kitchen we went to whip these up.

I love getting the kids involved in the kitchen and these easy, no bake, Peanut Butter and Jelly Cups are perfect for little hands.

These Peanut Butter and Jelly Cups are great for the kids lunches and as an afternoon snack too!  Even the adults like them! I may have snuck a few.

We are peanut butter fanatics in this house but it’s gotta be Jif® Peanut Butter, a brand trusted for generations and who am I to argue?

Jif® is creamy, with fresh-roasted peanut taste that’s great for sandwiches, on crackers and in these Peanut Butter and Jelly cups.

And don’t forget the Smucker’s® Fruit Spreads.  For this recipe we used Strawberry, made with only high quality, hand-picked strawberries, but any of their fruit flavors would be delicious.

I’m thinking next time I make these, which will be VERY soon, I’m going to try them with raspberry and cherry.

Peanut Butter and Jelly Cups

Yield 8 servings

Delicious peanut butter and jelly cups are swirled with strawberry fruit spread and topped with crunchy peanuts for the perfect snack!

Ingredients

  • 1 cup Jif® Creamy Peanut Butter,
  • ¼ cup coconut oil, melted
  • 1 cup Smucker's® Fruit Spread, I used strawberry
  • 2-3 tablespoons warm water
  • Chopped peanut
  • Crushed freeze dried fruit, optional

Instructions

  1. In a medium size bowl, melt peanut butter and coconut oil together and stir.
  2. Pour 3 tablespoons of mixture into each muffin tin liner.
  3. In another medium size bowl, add Fruit Spread and water, just until thinned out a little bit.*I used all 3 tablespoons
  4. Dollop on top of peanut butter and swirl to combine.
  5. Top with crushed peanuts and freeze dried fruit, if desired.
  6. Place into freezer and chill 2-3 hours.

    Do they need to stay cold to hold shape?

      Hi Rita, They don’t need to be cold to retain shape, but they will become a little melty when held in your hand to eat. Hope this helps!

    What’s an alternative instead of the coconut oil?

      Best substitutes for coconut oil are: extra virgin olive oil, sunflower seen oil, avocado oil, grapeseed oil, or butter (last resort).

      I would store them in the refrigerator and keep them cool.
