I absolutely adore Christmas time and lights are my FAVORITE thing of Christmas

I may love it even more this year because my husband hung lights outside on our house.

I have never had outside lights on a house and just the act of me pulling in my driveway has me giddy each and every time.

We also started receiving Christmas cards and I love to see how creative people are each year and how much everyone has changed.

I also love designing our cards and look back on the fond memories of my own children and how much they have grown.

Merry Moose Cookies

We’re at the last day of #ChristmasCookie week and for today, I have these Merry Moose Cookies.

When YumGoogle said she would be sending everyone 2 cookie cutters of their choice, I knew one mine had to be a Moose.

And Side note, if you do not own a Silpat, you are missing out.  They are absolutely perfect for baking!

Merry Moose Cookies

My husband and I are members of our local Moose lodge and it’s where we’ve made some of our greatest friendships.

We love going in there and being greeted by other members and friends.

It’s a place for our kids to hang with other kids, listen to live music and enjoy the company of one another.

Therefore, making these Merry Moose Cookies was an easy choice so I could celebrate the holiday and my love for our Moose Lodge.

Merry Moose Cookies are gingerbread cookies decorated with a scarf to add a little Christmas spirit.

I made red royal icing and then used SprinklePop Sprinkles to give it some sparkle.

Yield 18 cookies

Delicious gingerbread cookies are cut and decorated into these Merry Moose Cookies adorned with a pretty red scarf. 

Ingredients

  • 3 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 6 tablespoons unsalted butter
  • 1 tablespoon vegetable shortening
  • 2/ cup packed light brown sugar
  • 3/4 cup molasses
  • 1 large egg
  • Royal Icing, for decorating
  • Sprinkles, for decorating

Royal Icing

  • 16 ounces powdered sugar
  • 2 tablespoons meringue powder
  • 6 tablespoons water
  • 1 teaspoon red gel food coloring
  • Sprinkles for decorating

Instructions

  1. Into a medium bowl,m combine flour, baking soda, salt, ginger, cinnamon, cloves and allspice.  Set aside.
  2. Melt the butter and shortening in a medium saucepan.  Remove from heat and add brown sugar and molasses.  Allow to cool.
  3. Add the egg to the butter mixture and beat with a mixer until incorporated.  In batches, add flour mixture and stir just until combined.
  4. Divide the dough in half, wrap in saran wrap and pat into a 1/2 inch thick disk and place into refrigerator to chill for at least 2 hours.
  5. Allow dough to come to room temperature
  6. Preheat oven to 350 degrees and line 2 cookie sheets with a Silpat or parchment paper.
  7. Roll out dough onto a lightly floured surface into a 1/4" thickness.  Using a cookie cutter, cut shapes out of the dough. Arrange onto baking sheet and bake 10 minutes.
  8. Allow to cool on baking sheets for 5 minutes and then place onto a wire rack to cool completely.

Royal Icing

  1. Sift the powdered sugar and meringue powder together into a large bowl.  Stir in the water and beat with a mixture, on medium speed, until soft peaks form.  Stir in food coloring.
  2. Place into a piping bag and pipe on a scarf.  Add Sprinkles and allow to dry.
