Summer is in full swing and I couldn’t be happier. I truly thrive in the summertime. From the fresh abundance of produce at the farmer’s market to the days spent at the pool and evenings spent around the fire enthralled in conversation, dripping in s’mores. Summer is my jam!

Most nights, dinner is usually prepared on the grill making sure there are leftovers for the next day’s lunch. We are busy in the summer so lunch is usually very quick, wholesome and convenient. Therefore, to make lunch even quicker, I like to prepare extra food the night before.
When my husband fires up the grill, we always throw produce that I’ve picked up from the market on the grill. Nothing is better than grilled vegetables served with kebabs, steaks or chicken. Grilled vegetables then make for delicious fillings for wraps and salads for the next day’s lunch.
One day when I came home from the pool around lunchtime, I was so excited to have a plethora of grilled vegetables in the refrigerator.
I had also just recently picked up Minute® Ready to Serve White & Red Quinoa and the lightbulb in my head turned on and I knew exactly what my lunch was going to be, Grilled Vegetable Quinoa Salad.
The new Minute Ready to Serve White & Red Quinoa cooks up, in the microwave, in just 60 seconds. When paired with the grilled vegetables and lemon Dijon vinaigrette I also had in the fridge, this salad was nothing short of amazing.

Grilled Vegetable Quinoa Salad

Ingredients
Lemon vinaigrette
- 1/3 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- Juice of 1 lemon
- Freshly ground black pepper
- Kosher salt
Grilled Vegetable Quinoa Salad
- 2 packages Minute® Ready to Serve White & Red Quinoa
- 1 zucchini, cut in half lengthwise and sliced into thin planks
- 1 yellow squash, cut in half lengthwise and sliced into thin planks
- 1 red onion, quartered
- 1 red bell pepper, seeded and quartered
- 1 yellow bell pepper, seeded and quartered
- 2 tablespoons extra virgin olive oil
- 4 ounces feta cheese, crumbled
- 2 tablespoons mint, finely chopped
Instructions
- In a mason jar, combine all ingredients for lemon vinaigrette dressing and shake to combine. Set aside.
- Preheat your grill or a grill pan over medium high heat.
- Place all vegetables onto a cookie sheet and drizzle oil olive, salt and pepper onto the vegetables. Toss to evenly coat.
- In batches, start to grill your vegetables until tender and charred, about 10 minutes total
- When cooled, place onto a cutting board and diced into 1-1/2 inch pieces. Place all vegetables into a bowl.
- Place 2 cups Minute® Ready to Serve White & Red Quinoa into the microwave and cook. Then repeat with 2 more cups.
- Place Minute Ready to Serve White & Red Quinoa into bowl with vegetables and pour on dressing. Toss to combine.
- Sprinkle feta cheese and mint on top of salad and lightly toss a few times until everything is incorporated.

This salad looks wonderful and exactly the kind of summer meal! I never notice the Minute Ready quinoa. How convenient! I would definitely eat it more when it takes only 1 minute to cook.
