I don’t know about you guys but I’ve got butter, sugar and flour up to my ears which can only mean one thing… it’s almost Christmas.

I am not sure how we are only 6 days away but to say I’m even remotely prepared would be an understatement.

We finally finished the shopping last night and tonight we’re going to see the light show, but man do I still have a to do list a mile long.  How are you doing on your lists?

So what better excuse to ignore the list than to bake these Christmas Monster Cookies 2 ways.  Sounds like delicious distraction to me.

Go forth, crank the Christmas music and get into the kitchen to bake up something delicious with and for the ones you love!

We’re big fans of monster cookies in this house.  What’s not to love about peanut butter, M&M’s and chocolate?!

I happen to have a fabulous and delicious monster cookie recipe that I tweaked just a little bit to bring in some Christmas cheer.

So these Christmas Monster Cookies 2 ways go like this.

A traditional monster cookie with mini red and green M&M’s

A double chocolate peppermint Monster Cookie with peppermint extract, in place of vanilla and the addition of cocoa powder.

The peppermint is subtle and not overpowering, which is perfect for a little bit of subtleness.

Christmas Monster Cookies 2 ways

I happened upon this Nielsen-Massey Holiday Flavors Bundle on Amazon and snatched it up as fast as my fingers could move.

It’s only available on Amazon and features Madagascar Bourbon Pure Vanilla Extract, Pure Almond Extract and Pure Peppermint Extract.  All of which are perfect for holiday baking.

At any given time, you’ll likely find 6 different Nielsen-Massey pure flavor extracts in my kitchen.

I used the Madagascar Bourbon Pure Vanilla Extract in the traditional monster cookie and the Pure Peppermint Extract in the double chocolate monster cookie version.

This recipe for Christmas Monster Cookies 2 ways will please both traditionalists and double chocolate lovers alike! 

Ingredients

Christmas Monster Cookies (traditional)

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 egg, room temperature
  • 1 cup all purpose flour
  • 1/2 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup M&M's mini Baking Bits

Christmas Monster Cookies (double chocolate peppermint)

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup peanut butter
  • 1/2 teaspoon peppermint extract
  • 1 egg, room temperature
  • 3/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup M&M's mini Baking Bits

Instructions

Christmas Monster Cookies (traditional)

  1. Preheat oven to 350 degrees and line a baking sheet with a Silpat or parchment paper.
  2. Into the bowl of your stand mixer or a large bowl, add butter, granulated sugar, brown sugar and peanut butter and beat until creamy.  Add in vanilla and peanut butter.
  3. Into a medium bowl whisk together flour, oats, baking soda and salt.  
  4. Slowly add dry ingredients into wet ingredients.
  5. Fold in chocolate chips and mini M&M's.
  6. Using a medium cookie scoop (1.5 tablespoons), drop dough onto prepared pan.  Press a few mini m&m's onto the tops of each cookie and bake for 10 minutes.  Allow to cool on pan for 5 minutes and then remove to a wire cooling rack to cool completely.
