Caribbean Pork Chops with Mango Pineapple Salsa

Caribbean Pork Chops with Mango Pineapple Salsa

I’ve been eating this Mango Pineapple Salsa straight from the bowl and then I took it to another level, seasoned the Smithfield All Natural Bone-In Pork Chops with Caribbean flavor and BAM, holy mother of flavor bomb!

When it comes to pork chops, I prefer to cook them with the bone-in just like I did with these Peach and Dijon Pork Chops (which you should absolutely try while the peaches are at their prime this summer.

We love pork, especially Smithfield All Natural Pork.  Smithfield is Guaranteed Tender so it’s perfect for all these pork chops recipes and these Dry Rubbed Pork Ribs.

These Caribbean Pork Chops with Mango Pineapple Salsa come together in less than 15 minutes.

I chose to cook them on the stove top but Smithfield All Natural Fresh Pork is also great on the grill!

I paired these Caribbean Pork Chops with Mango Pineapple Salsa with coconut rice and black beans which were the perfect side dishes.

I made the Caribbean seasoning but if you are pressed for time you are more than welcome to purchase a jar of seasoning.  I prefer to control the ingredients that go into my spice rubs but store-bought is absolutely fine.

The Caribbean rub is made with spices that are already in your pantry.  What I love about the flavors of the Caribbean is their spicy, sweet and fragrant resulting in a wonderful, aromatic dish.

Ingredients

Mango Pineapple Salsa

  • 1 fresh mango, diced
  • 1/2 cup fresh pineapple, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, diced
  • 1/2 red onion, diced
  • 3 tablespoons cilantro, chopped
  • juice of 1/2 lime

Caribbean Seasoning

  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoons allspice
  • 1/8 teaspoon ground cloves

Instructions

Mango Pineapple Salsa

  1. Place all ingredients into a bowl and mix to combine.

Caribbean Seasoning

  1. Place all spices into a bowl and mix to combine.

Caribbean Pork Chops with Mango Pineapple Salsa

  1. Sprinkle pork chops with Caribbean seasoning.
  2. Place a cast iron pan onto stove over medium heat.  Sear pork chops, on both sides, for 4 to 5 minutes or until internal temperature reaches 145 degrees.
  3. Place onto plate and top with Mango Pineapple Salsa.

The fresh mango pineapple salsa is absolutely delicious on top of these juicy, tender Smithfield Bone in pork chops.  This meal will be on repeat for the rest of the year.

    My stomach is RUMBLING. That sear on the pork looks amazing! The mango pineapple salsa also totally steals the show with it’s gorgeous colours. It’s definitely a combo of flavours I want in my mouth right now. I can’t wait to eat it!

    Wow….all my favorite flavors….sounds delish! Mango pineapple salsa is positively one of my favorites paired with grilled meat, and I love the spices you chose. I would definitely serve this meal just as you have it with rice and beans. What a complete and tasty meal.

    You’re hitting on all cylinders with this Caribbean style pork recipe, it reminds me of my favorite jerk seasoning. I actually grew up very close to Smithfield, Virginia — and I totally agree that Smithfield pork is by far the best — and it’s so convenient, available everywhere. By the way, that tropical salsa sounds like the perfect balance for the flavors in the pork chops. Beautiful dish!

    This is such a fun spin on pork chops! I love making them with an apple + cranberry onion mixture in fall, but this is a perfect way to add summer flare. Pork pairs so well with sweet fruits. Can’t wait to try this!

    Yes, please! That salsa looks so bright and fresh. I am such a fan of fruit accompaniments with pork, and this has summer written all over it! I, too, love cooking bone-in pork chops.     Adding something sweet along with pork is such a great flavor combination. I think it all started with pork chops and applesauce. We do love mangos and I would be eating the salsa with a spoon too. This is a terrific salsa.
