Bacon Wrapped Pimento Stuffed Jalapenos

Bacon Wrapped Pimento Stuffed Jalapenos are a kicked up version of your standard jalapeno popper.  These are stuffed with delicious pimento cheese, wrapped in bacon and then grilled until nicely charred. Our jalapenos will having you kick your deep-fried ones to the curb.

Anyone else super pumped it’s the freakin’ weekend?  I AM!  AND I’m even more excited that we have no plans this weekend. Doesn’t that make me sound so lame and old? Hang on, lemme explain.  This is the first weekend, all summer long, we have had nothing to do.  We’ve had weddings, trips, bar crawls, birthdays and vacation.  Yes, now I agree, all of that stuff is super fun, but it gets tiring traveling here and there and everywhere. Therefore,  I’m looking forward to quality family time spent at H-O-M-E.  I’m thinking pool day followed by pizza, movie and popcorn night.  Sounds like a great weekend to me!

Speaking of movies, anyone seen Trainwreck yet?  If not, DO IT NOW, this weekend. It was laugh out loud hysterical.  I just love anything that comes out of Amy Schumer’s mouth.  Did you see her interview on Jimmy Fallon, LOL! Again, watch it…until your stomach hurts. Also, totally not a chick flick.  Although, I went with my girlfriends, the hubs would have loved it.  First off, he loves Amy Schumer as well, enjoys a great comedy and is a HUGE sports fan.  Make it a date night and then let me know how you liked it.

It’s summer time, so I look for any reason to fire up the grill.  A Hyvee grocery store recently opened up in our town that is .2 seconds away from our house.  What an awesome store!  While perusing the meat case looking for something for dinner my eyes kept wandering back to these stuffed jalapenos.  I thought, there would be a perfect accompaniment to the steak we’d be having for dinner.  I took those babies home put them on the grill and about 10 minutes later I was enjoying a stuffed grilled jalapeno.

Now, I’m not sure about you but I don’t love cream cheese in my jalapeno poppers.  I’m more of a cheddar girl as I’ve expressed my love for cheese on this blog too many times to count.  The ones from Hyvee were stuffed with cream cheese and while good, I wondered how I could make them differently.  As I was putting food away in the fridge my eye happened upon the pimento goat cheese spread I had just made earlier that morning.  Bingo, there was my something different. I was going to stuff jalapenos with some glorious pimento cheese and wrap the whole thing in bacon

You will probably want to wear some sort of glove when handling jalapenos.  It’ll save your fingers from burning or worse rubbing your eyes before you’ve thoroughly washed them.  You’ve been pre-warned.  Once you’re fully suited up in your gloves, take the jalapeno, and if you want cut off a little bit from the backside to make it sturdy when it’s laying on its side, and cut a “V” shape into the jalapeno. Scrape out the seeds and ribs. It’s up to you how much of the seeds and ribs you discard, but keep in mind, the more you leave in there, the hotter the pepper will be.

Once you’ve cleaned out the pepper start stuffing it with your pimento cheese. My peppers were rather large so I was able to get about 2 tablespoons in each.  Don’t be skimpy here, fill em to the brim.

Once your peppers are stuffed, starting at the top, take a piece of bacon, and wrap as far down as you can go.  Make sure to overlap so you don’t have gaps anywhere on the pepper.  If need be, and I did, use another piece of bacon so that bacon covers the entire length of the pepper.  Can’t have too much bacon now, can we?!

Put those babies on the grill, with indirect heat, and char 2.5 minutes per 4 sides.  We like ours really charred, so if you aren’t so much a fan of that, make sure you watch them closely.

Look at those gorgeous bacon wrapped pimento stuffed jalapenos.  It’s a work of art, if you ask me.  They were absolutely scrumptious and everything I’m looking for in a jalapeno popper.  Salty, cheddar cheesy, creamy, spicy and charred.  These make a great appetizer, a side dish and would make a perfect snack for Super Bowl.

Bacon Wrapped Pimento Stuffed Jalapenos are a kicked up version of your standard jalapeno popper. These are stuffed with delicious pimento cheese, wrapped in bacon and then grilled until nicely charred. Our jalapenos will having you kick your deep fried ones to the curb.

Ingredients

  • Store bought or hommade Pimento Cheese
  • (recipe found here, http://www.strawberryblondiekitchen.com/pimento-goat-cheese-spread/)
  • 6-8 jalapenos, depending on their size
  • 12-16 pieces of bacon, I used center cut

Instructions

  1. Start by cutting a "V" the length of each jalapeno pepper
  2. Stuff each jalapeno with pimento cheese until they are full.
  3. Starting at the top of each jalapeno, take a piece of bacon, and wrap as far down as you can go. Make sure to overlap so you don't have gaps anywhere on the pepper. I used 2 pieces of bacon per pepper.
  4. Prepare your grill and set coals off to one side. This is indirect grilling. You'll want to put your peppers on the side without the coals.
  5. Grill peppers 2.5 minutes per 4 sides or until charred to your liking.

Notes

*When handling jalapenos, make sure to wear gloves and wash your hands thoroughly.

    I love stuffing the jalapeno peppers that grow in my garden this time of the year. I have never thought to wrap them in bacon and definitely need to try this recipe!
