 I don’t know about you guys but Daylight Savings Time is sorta, kinda kicking my butt.  I fee like one day it’s 4pm and I have control of my life, and the day has gone as planned and the next thing I know it’s 7pm and I’m wondering where the whole day went and how I’m suppose to accomplish all I have left to do in the day.  Anyone with me??

However, I am a fan of the sun not setting until 7pm.  The kids just came in for their nightly bath and then it’s bed time “me time”.  They spent the entire afternoon outside playing while I was doing Lord knows what but somehow still manage to have my entire to do list staring me in the face. Oy vey!  The kids are also sleeping in later in the mornings so I have time to get things done, and make a quick breakfast.  I am the queen of quick breakfasts, or no breakfast at all.  I know, so bad, but it’s true.  Time for 2 cups of coffee, most definitely, but that’s about it for me.  Then it’s racing out the door to get the kids to school, errands, pick daughter up from preschool, lunchtime.  No time for breakfast.  Oh what I would give for a morning with oatmeal, topped with granola and honey, bliss….

Granola, let’s talk granola.  I’m a HUGE fan!  I like to put it on ice cream, in my yogurt and in my oatmeal.  I’m a texture person and I love a crunchy bite.  When I have the time, I like to make a delicious and more nutritious breakfast.  Load up on the whole grains, fiber and nutrition to really get me fueled up for my day.  What I don’t love about some granolas is the amount of crap and sugar overload in them.  Now, don’t get me wrong, I love a good chocolate chip in granola but some of them are just “candy.”  And then I found Quaker® Real Medleys SuperGrains Blueberry Pecan Granola and also Quaker® Real Medleys SuperGrains Cinnamon Apple Walnut Granola, at my local Wal-mart, in the cereal aisle.

Mind blown you guys and I’m not even kidding you.  First off these granolas are PACKED with delicious clusters of yummy goodness, and they feature 7 super grains and seeds: whole grain oats, whole grain wheat, flaxseed, red quinoa, sunflower seeds, amaranth, & barley.  Yes, all of that in one bag plus fruits and nuts; blueberries and pecans.  So you’re getting all that satisfying goodness and nutrition too.

When I got home I immediately opened the Real Medleys SuperGrains Blueberry Pecan Granola and the smell wafting from the bag was intoxicating.  I told you I have found my true love in granola.  I grabbed a handful and then another and then another and then I remembered I was supposed to create a recipe with said granola.  Now, remember I said I have little to no time to make breakfast?  Insert Real Medleys SuperGrains Blueberry Pecan Granola.  Now, I don’t have time to sit down and enjoy the granola as a cereal during the week, but holy moly, on the weekends, you can bet your hiney I’ll be doing just that. What I do have time for is Blueberry Muffin Energy Bites.

I have a love hate relationship with no bake bites.  I love to make them because they are so delicious and nutritious (I always pack mine with chia seeds, flaxseed and whole grains) but I hate them because I always end up eating the entire recipe, seriously.  No bake energy bites are supposed to be like 1 and done, right?! Oh no, not for me, before I even begin making them into balls I’ve already put down 4 “would be bites”  in my mouth.  So whenever I make a recipe I have to account for all the no bake goodness in my stomach.

And that was the case with these Blueberry Muffin Energy Bites.  The amount of flavor that’s packed into the Real Medleys SuperGrains Blueberry Pecan Granola is unreal.  Hands down the best granola I’ve ever had.  I also opened the bag of Real Medleys SuperGrains Cinnamon Apple Walnut Granola and there were whole chunks of baked apple in there!  I was blown away.  So much flavor packed into those clusters it was a no wonder these energy bites are so damn good!

I mentioned these are no bake and only 4 ingredients, right?! Yep, they’re so easy, I know you’re going to love them.  All I did was combine the Quaker® Real Medleys SuperGrains Blueberry Pecan Granola with peanut butter, real maple syrup and unsweetened coconut flakes and that’s the recipe I am featuring here.  I should mention I also made energy balls out of the Cinnamon Apple Walnut Granola, minus the coconut flakes, because the Blueberry Pecan lasted .02 seconds in this house with a hungry husband and kids.  My son kept running around the house asking for more energy balls!  Gone, lickety split.

I quickly threw some into a container, placed them in the fridge and hide them from the rest of my family so I could pack them into small baggies the next morning and put them in the car.  That way, I could have breakfast, in the car on the way to drop the kids off at school.  Such an easy, pop-able breakfast and I don’t have to worry about getting crumbs all over the car.  Win-win all around, folks!

Blueberry Muffin Energy Bites

These 4 ingredient, no bake, Blueberry Muffin Energy Bites are the perfect grab and go breakfast or snack. Packed with good for you super grains and seeds, these will be your new and nutritious way to start your day or tackle your afternoon to do list!

Ingredients

  • 1 cup Quaker® Real Medleys SuperGrains Blueberry Pecan Granola
  • 1/3 cup peanut butter
  • 1/4 cup unsweetened coconut flakes
  • 3 Tablespoons real maple syrup

Instructions

  1. In a food processor, place the Quaker® Real Medleys SuperGrains Blueberry Pecan Granola and pulse 10-12 times until a powder forms but there are still visual chunks. Pour into a medium bowl.
  2. In the medium bowl, add in peanut butter, coconut flakes and maple syrup. Stir to combine.
  3. Using a teaspoon, scoop out portions and roll into balls.
  4. Place on a parchment lined baking sheet and place in the freezer to chill for at least 30 minutes. Enjoy!

 Just look at all the whole grain goodness in those babies.  Also, can you see the little seeds and flecks of barley in there?  SO GOOD!  And as I mentioned, this is a recipe for the Blueberry Muffin Energy Bites, also try making energy bites out of the Quaker® Real Medleys SuperGrains Cinnamon Apple Walnut, eliminating the coconut, or leave it in there, it’s up to you.  Either way, they’re both delicious and they won’t be around for long.  So do yourself a favor and get 2 of each bag, I’ve already had to go back to the store just so I can keep a backup in the house!

    No bake energy bites are the BEST! Like you though… they never last very long and I’m nowhere near as disciplined as I should be with them. Glad you’ve found a much healthier pre-bought granola mix. I always cringe when I read the back of most packets.

    I was in Hawaii during Daylight Savings, and they don’t participate! so… the three hour time difference when we landed was brutal! 😉

    I totally need to make these, I love the idea of using granola!

    I’m so with you on the daylight savings time issue. It’s been weeks and I’m still trying to adjust. I’m not sure why it takes me so long; I guess my body doesn’t react well to change. Loving thee Blueberry Muffin Energy Bites – gorgeous – maybe that’s what I need to get me through the day. 🙂

    1 and done? Yeah right! hahah I’m the worst… I eat mixture with the spoon while I’m making balls. LOL so I TOTALLY get you. 😉 I never tried making energy bites with granola.
