Who here is feeling the rush of the holiday season?

We are in full swing here.  Between planning to host Thanksgiving dinner, cooking, baking and shopping for presents, I’m in full blown holiday mode.

I will say those, it is the most wonderful time of the year.  Stressful, yes, but it doesn’t have to be when you have a delicious dinner plan like these Zucchini Stuffing Boats.

If there’s one thing that I can cross off my list each week, it’s meal planning.

For me, it’s essential to know what we are having throughout the week so that I can plan accordingly between everything else we have going on.

One of my family’s favorite dishes these days are these Zucchini Stuffing Boats.

Zucchini boats are packed full of delicious Kraft Stove Top Stuffing Mix, sweet potatoes, dried cranberries and topped with Kraft Natural Cheese Sharp Cheddar Shredded Cheddar Cheese.

And the best part?!  They’re done in under 30 minutes.  

While shopping at Walmart, I make sure to stock up on dinner time essentials while I’m also purchasing items for the holiday season.  It’s a one-stop shop, and it couldn’t make life easier!

And if I’m running super short on time, like after-school activity nights, I shop while watching gymnastics practice and use Walmart’s online grocery pick up.  It’s genius if you ask me – try it yourself here

What I love about these Zucchini Stuffing Boats is that they feature ingredients that I use in my kitchen during the holidays.  

We always have stuffing for Thanksgiving and Christmas, and cheese in this house is always a given.

Sweet potatoes are a staple, and my kids will never turn down a side dish of Kraft Velveeta Shells & Cheese topped with Oscar Mayer America’s Favorite Bacon, Naturally Hardwood Smoked Bacon Uncooked.

These Zucchini Stuffing Boats are a quick and simple dinnertime solution that’ll be on the table in under 30 minutes and that the whole family will love!

Ingredients

  • 4 zucchinis (hollowed out)
  • 1 box Kraft Stove Top Stuffing Mix, chicken flavored
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 cup yellow onion, diced  
  • 1 medium sweet potatoes, peeled and diced, about 1/2 cup
  • 2 celery ribs, diced
  • 1/4 cup dried cranberries
  • 1/4 cup chicken stock
  • 1/2 cup Kraft Shredded Sharp Cheddar

Instructions

  1. Preheat oven to 350 degrees.
  2. Half the zucchini and scrape out the insides, leaving a 1/4 inch shell.  Place into a shallow baking dish.
  3. Cook stuffing according to package directions and set aside.
  4. In a large sauté pan over medium heat, add olive oil, garlic, onion, sweet potatoes and celery.  Cook until vegetables begin to soften, about 5 minutes.
  5. Add in chicken stock and dried cranberries. Allow to cook until all liquid has been absorbed, about 5 minutes.
  6. Stir vegetable mixture into stuffing mixture and divide evenly between halved zucchini.
  7. Top with cheddar cheese and bake in oven for 20-25 minutes.

I don’t know about you guys, but my family are Stove top Stuffing fanatics, so anytime I can whip up a box and use it as a main dish, I’m doing it.
