These Zucchini Stuffing Boats are a quick and simple dinnertime solution that’ll be on the table in under 30 minutes and that the whole family will love!
Ingredients
4 zucchinis (hollowed out)
1 box Kraft Stove Top Stuffing Mix, chicken flavored
1 tablespoon olive oil
2 garlic cloves, minced
1/2 cup yellow onion, diced
1 medium sweet potatoes, peeled and diced, about 1/2 cup
2 celery ribs, diced
1/4 cup dried cranberries
1/4 cup chicken stock
1/2 cup Kraft Shredded Sharp Cheddar
Instructions
Preheat oven to 350 degrees.
Half the zucchini and scrape out the insides, leaving a 1/4 inch shell. Place into a shallow baking dish.
Cook stuffing according to package directions and set aside.
In a large sauté pan over medium heat, add olive oil, garlic, onion, sweet potatoes and celery. Cook until vegetables begin to soften, about 5 minutes.
Add in chicken stock and dried cranberries. Allow to cook until all liquid has been absorbed, about 5 minutes.
Stir vegetable mixture into stuffing mixture and divide evenly between halved zucchini.
Top with cheddar cheese and bake in oven for 20-25 minutes.
