Vanilla Mint Iced Coffee

Vanilla Mint Iced CoffeeMint.  A love of mine since I was a little girl.  First choice at “The Black Cow” ice cream shop, the ice, mint chocolate chip ice cream.  Ice cream choice of today still rings the same.Now that the weather is getting warmer, I know I keep talking about it but can’t a girl get excited, I’m all about cooling down.  That is also true with my coffee.Most of the time, I like to drink my coffee hot but when the summertime rolls around, I need something cool and refreshing so I reach for an iced coffee.  A vanilla mint iced coffee that is.

Sometimes on the weekends, I’ll make a big batch of iced coffee so we can enjoy it all week long.  Other times, I just make some espresso over ice and add in my condiments.

Recently while shopping at Walmart I discovered Left Field Farms.  It’s a delicious and simple new coffee creamer that’s non-GMO.  It contains real milk, real cream and real sugar.

I grabbed the Vanilla variety, they also have caramel and sweet and creamy, and happily went home to cure my afternoon slump with an iced coffee.

I had recently made sugar free mint simple syrup and figured it would be absolutely delicious in my iced coffee with Left Field Farms vanilla creamer.

It’s a simple mixture of a sugar substitute, water and fresh mint leaves.  Just know that sugar substitutes are sweeter by volume than regular sugar so you want to use the ratio ½ sugar substitute to 1 cup sugar, if subbing in a recipe.

Yep, I was right.  This vanilla mint iced coffee is refreshing and totally hit the spot.  I am also never having iced coffee without mint again.

Ingredients

Mint simple syrup

  • 2 cups water
  • 1 cup sugar substitute
  • 1 bunch of fresh mint leaves

Vanill Mint Iced Coffee

  • 8 ounces iced coffee
  • Ice
  • Mint simple syrup (recipe above)
  • 1 tablespoon Left Field Farms Coffee Creamer
  • Fresh mint leaves, if desired

Instructions

Mint simple syrup

  1. Set a small pot on the stove, over medium heat and combine water and sugar substitute.  Stir until sugar dissolves and the liquid is clear.  Turn off heat and add in mint.  Allow to cool to room temperature.   Strain mint sugar syrup over a fine mesh strainer, into a bowl, pour into mason jar and store in refrigerator.

  1. Into a mason jar or cup, add coffee and ice.  Pour in mint simple syrup and creamer.  Stir to combine and garnish with fresh mint leaves, if desired.

Notes

*This can easily be doubled.

Pro tip:  You can make this iced coffee with any type of simple syrup you have on hand.  A vanilla simple syrup or a cinnamon brown sugar simple syrup. Also, if you don’t want it sugar free, feel free to use regular granulated sugar but use equals parts sugar to water.

Just look how amazing that coffee looks.  And because of the sugar substitute I used, there’s only 5 grams of sugar in this cup of coffee.  There’s nothing I hate more than an overly sweetened cup o’ joe.

Next time your in Walmart, make sure to head to the dairy section and check out Left Field Farms.  You’ll be delighted there creamers and milk contain nothing but real ingredients with no added sugars.
