This smoked sausage and beer cheese soup is bursting with smoked sausage, sharp cheddar and beer that’s stick to your ribs hearty and delicious! | Strawberry Blondie Kitchen
Ingredients
2 tablespoons butter
2 cups broccoli florets
1 cup carrots, shredded
½ cup onion, diced
3 cloves garlic, minced
¼ cup flour
½ teaspoon dry mustard
½ teaspoon salt
¼ teaspoon pepper
2 cups milk
4 ounces cream cheese
13 ounces Eckrich Smoked Sausage, sliced into ½” pieces
2 cups sharp cheddar cheese
1 cup chicken stock
1 cup beer (choose a light red or brown ale)
Instructions
In a large stockpot, melt butter and add onion and garlic. Sauté 2-3 minutes and then add in broccoli and carrots and stir to combine.
Sprinkle in flour and seasonings and cook for 1 minute.
Slowly add the milk, stirring to combine.
Add cream cheese and stir until melted.
Add in remaining ingredients, bring to a boil until thickened and reduce heat to a simmer. Cook until heated through.
Top with popcorn, additional cheese or cheese curds (the best!)
