Piña Colada Ice Cream Bites are the perfect treat to cool down this summer.  Layers of coconut crust, pureed pineapple and Coconut ProYo High Protein Low Fat Ice Cream make these your new summertime dessert.

Instructions

Layer 1

  1. Preheat oven to 350 degrees
  2. Line a muffin tin with 6 parchment paper liners.  Set aside.
  3. In a food processor, place all ingredients for Layer 1 and process until fine crumbs form.
  4. Place 1 tablespoon + 1 teaspoon mixture into each well and press down.
  5. Bake for 10 minutes or until golden brown.  Allow to cool.

Layer 2

  1. Place 1 cup pineapple chunks into food processor and process until smooth.
  2. Place 1 tablespoon puree on top of baked crusts.  Freeze for 2 hours.

Layer 3

  1. Place 2 tablespoons softened Coconut ProYo High Protein Low Fat Ice Creamon top of pineapple puree layer and smooth out.  Freeze for 4 hours or until firm.
  2. Take off paper liner and top with whipped cream and a cherry if desired.

Notes

*to toast almonds place into small skillet set over low heat and stir frequently until fragrant, about 3-4 minutes.
