Ingredients
1 1/2 cups all purpose flour
1 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
3/4 cup buttermilk
1/2 cup brown sugar
3 tablespoons applesauce, unsweetened
1 egg
1 teaspoon vanilla extract
1 cup peaches, peeled & diced (2 whole)
Oatmeal Crumb Topping
1/4 cup old-fashioned oats
1/4 cup flour
1/4 cup brown sugar
3 tablespoons butter
1/2 teaspoon cinnamon
Instructions
Preheat oven to 400 degrees and line a 12 cup muffin tin with papers
In a medium bowl, combine dry ingredients (flours through salt) and whisk to combine.
In a separate bowl, combine wet ingredients (buttermilk through vanilla) and incorporate
Make a well in the center of your dry ingredients and pour the wet ingredients into well.
Stir until just combined, being careful not to over-mix.
Fold in peaches.
Using a medium scoop, scoop muffin batter into prepared tins until 3/4 full.
In a small bowl, combine ingredients for the crumb topping until it forms pea-size clumps.
Top each muffin with a generous handful of oatmeal crumb topping and bake in oven for 15 minutes or until a toothpick insert into the center comes out clean.
Place on a wire rack until completely cooled.
