  1. Sprinkle pork chops with salt and pepper.
  2. Place a cast iron pan onto stove over medium heat.  Sear pork chops, on both sides, for 4 to 5 minutes or until internal temperature reaches 145 degrees.
  3. Add butter, peach, shallot, dijon, cinnamon and thyme to pan and toss around until butter is melted.
  4. Serve pork chops with peach dijon pan sauce.
