These Mixed Berry Crumble Bars are crunchy, bursting with berry flavor and the perfect on- the- go breakfast or snack any time of the day!
Ingredients
Crust Layer
6 cups Kellogg's® Frosted Flakes®, crushed
1 teaspoon ground cinnamon
3 tablespoons granulated sugar
1/2 cup butter, melted
Mixed Berry Layer
16 ounces frozen mixed berries (I used a mix of strawberries, blackberries, raspberries and blueberries)
4 ½ teaspoons flour
¼ cup granulated sugar
2 ¼ teaspoons cornstarch
1 tablespoons fresh lemon juice
Crumble layer
¾ cup old fashioned oats
¾ cup all-purpose flour
½ cup brown sugar
¼ teaspoon baking powder
1/8 teaspoons salt
¼ cup butter, melted
Instructions
Crust layer
Preheat oven to 350 degrees. Line a 9 x 9 baking pan with parchment paper and spray with cooking spray. Set aside.
Into a food processor, add Kellogg's® Frosted Flakes®, cinnamon and sugar. Slowly pour in melted butter until combined.
Place into prepared pan. Spread out and press down to form a crust. Bake for 5 minutes and set aside to cool.
Mixed Berry layer
Place berries, flour, sugar, cornstarch and lemon juice into a medium sauce pot and cook over medium-low heat until berries start to burst, about 5- 7 minutes. Lightly mash with a potato masher to break up larger pieces.
Place into refrigerator to cool for 30 minutes to slightly set.
Pour on top of crust layer
Crumble layer
Into a medium bowl, combine oats, flour, brown sugar, baking powder and salt. Pour in butter and mix with a fork to combine.
Place crumble mixture on top of mixed berry layer, making sure to evenly cover the top.
Bake in preheated oven for 25 minutes or until top is golden brown.
Allow to cool slightly and then place into refrigerator for 1 hour to firmly set up. Cut into bars.
