Crispy, crunchy and packed with ham and cheesy goodness, these Ham and Cheese Stuffed Hash Brown Balls should be on your next breakfast and brunch table!
Place Simply Potatoes, 2 eggs, 1 cup breadcrumbs, parmesan cheese, garlic powder, onion, powder, salt and pepper into a bowl and mix to combine.
Using a large cookie scoop, scoop mixture into your hands and form into a ball.
Place a cube of cheese in the middle and a few pieces of ham and re-roll the ball so that the cheese and ham are in the center and not exposed. Place onto a cookie sheet and repeat with remaining mixture.
Place remaining eggs into a shallow dish and lightly beat.
Place panko bread crumbs into another shallow dish.
Place oil into a medium skillet and set over medium low heat. Heat oil until 350 degrees.
Roll balls into egg mixture and then into panko bread crumbs and place into pan with oil.
Working in batches, lightly fry on all sides.*
*To keep warm, I set the oven to 250 degrees and line a baking sheet with paper towels. When they are finished frying, I place them onto the baking sheet and place them into the oven to keep warm.
