Grapefruit Ginger Vanilla Margarita

A little sour, a little spicy, with a hint of sweet, this Grapefruit Ginger Vanilla Margarita will satisfy all taste buds.  It’s refreshing and beautiful!

As far as I can hear everyone is bracing for #icepocolypse.

Grocery stores are clearing shelves, people are planning for the worst and I’m over here whipping up cocktails and leaving on a bus first thing in the morning for the Dells.  At least we better be leaving for the Dells.

I pray that when we wake up in the morning, the ice was hyped up to be more than it really is.  I’d hate to tell the kids we aren’t going on our annual trip.  We’ve been looking forward to it since last year and it’ll be a great getaway.  Plus, they have hot tubs, yes more than 1!

I’m not even going to think that not going is an option, while I sit here and sip on this Grapefruit Ginger Vanilla Margarita thinking of warmer weather, sunshine and hot tubs.

Grapefruit Ginger Vanilla Margarita | Strawberry Blondie KitchenI love grapefruit!  Something about it’s slightly sweet and sour taste that just livens up the gloomiest of days.

When I think of grapefruit I think of summer and well, you know, summer is my favorite.  Grapefruits are also just gorgeous.  They’re a perfect beautiful pink color when you cut into them.  The segments look like little jewels.  I guess you could say I have a slight obsession with them.

I believe my love of grapefruit started when my husband and I first got married.  We’d go out and I’m hem and haw over what I was going to order at the bar.  I’m not a sweet “pop” drinker so it always takes me a good 10 minutes of deciding just what I am going to drink only to end up on the same thing, Grapefruit vodka with a splash of club soda.  This drink of choice is still alive and well today.

I also LOVE margaritas and am quite the snob when it comes to them.  Many times they are full of sugar, WAY too much triple sec and/or too much sour mix.

Just give me some tequila, fresh lime, orange liqueur and NEVER frozen.  I’m also a health conscious person so when I go out drinking, I like to keep my calories in check.

Insert Stirrings 5 calorie margarita cocktail mix.  I also discovered Stirrings when my husband and I first got married and was introduced to their Cosmopolitan (which they also have a 5 calorie version of now!)

They’re mixes and rimmers are perfect for when you want a quick cocktail.  They’re also great for entertaining so you can supply your guests with a plethora of options for mixing up their own versions.

When I go out to a bar, you can either find me sipping on a margarita, a Moscow Mule, a Bloody Mary or really hoppy IPA.  I’m pretty easy to please but I always like a little twist on a classic.  No boring cocktails here.

So for this margarita recipe I started researching flavors combinations and what would “whisk me away” or at least make me feel like summer.

Grapefruit Ginger Vanilla Margarita.  It’s a mouthful but a delicious one. 

I knew I wanted to use grapefruit because

1.  I love them

2. they’re in season and

3. they’re pink, yellow and orange and remind me of a sunset. 

I also happened to have ginger beer on hand and I like effervescence in my cocktails.  Lastly, a very long time ago I saw some put vanilla bean seeds in their cocktail and not only did it look pretty, I thought it would add a hint of sweetness.  (pretend it doesn’t look like black pepper)

So I used tequila blanco, Stirrings 5 calorie margarita cocktail mix, fresh grapefruit juice, ginger beer and vanilla bean seeds.  Shake it all up, serve it in a pretty glass rimmed with Stirrings margarita rimmer and in 2 minutes flat, you feel like your on a tropical island getting your tan on.  Not really but I’m trying to paint you a picture here so you can forget about all the impeding snow.

Grapefruit Ginger Vanilla Margarita

A little sour, a little spicy, with a hint of sweet, this Grapefruit Ginger Vanilla Margarita will satisfy all taste buds.  It's refreshing and beautiful!

Ingredients

1.5 ounces tequila blanco

Seeds from 1/2 vanilla bean pod

2 ounces Stirrings 5 calorie Margarita cocktail mix

2 ounces grapefruit juice, freshly squeezed

2 ounces ginger beer (I used diet)

Stirrings Margarita rimmer

Instructions

Dip the edge of your glass into water or rim the edge of the glass with a wedge of lime.  Dip into Stirrings margarita rimmer or a mixture of salt and sugar, if desired.

In the bottom of your glass, add tequila and seeds from vanilla pod.  Stir to break up any clumps of vanilla seeds.

Add Stirrings 5 calorie Margarita cocktail mix and grapefruit juice. Stir.

Place a handful of ice into the glass and top with ginger beer.  Add more of less to your taste preference.  I added 2 ounces.

If desired, garnish with a grapefruit wedge, crystallized ginger and/or vanilla pod.
