These delicious Everything Bagel Breakfast Pockets have eggs, sausage and Everything Bagel cheddar cheese stuffed inside puff pastry. They’re nothing short of incredible and the best excuse to wake up!
Ingredients 1 box (17.3oz) Puff Pastry Sheets, thawed. 16 ounces breakfast sausage 1 tablespoon butter 7 eggs, divided 2 tablespoons milk ¼ teaspoon salt 1/8 teaspoon pepper. 4 ounces Cabot Everything Bagel cheddar Cheese ¼ cup green onions, sliced 2 tablespoons Everything Bagel seasoning Instructions Preheat oven to 425 degrees F. and line 2 baking sheets with parchment paper or a Silpat. Brown sausage in a medium pan over medium heat. Remove to a paper towel lined plate. In a medium bowl, whisk eggs, milk, salt and pepper. Add 1 tablespoon butter to the same pan you browned the sausage and pour in egg mixture. Cook the eggs for 3 minutes, until they’re still soft. Remove from heat and stir in cheese. Stir in sausage and green onions. Roll out puff pastry onto a floured surface into a 12 x 10” square. Cut the square into 4 equal parts. Repeat with second puff pastry sheet. Place 1/3 cup of the egg filling onton each square. Fold over the puff pastry and crimp the edges to completely seal. Place remaining egg in to a small bowl and whisk. Brush egg wash over the puff pastry sheets and sprinkle with Everything Bagel seasoning. Bake in the oven for 15 minutes or until golden brown. **I had about 1/2 cup extra filling leftover. Use in an omelet, breakfast quesadilla or a skillet.
