This easy roast chicken is flavorful with extra crispy skin and super simple for a delicious Sunday dinner!

  1. Preheat the oven to 425 degrees
  2. Rinse chicken and pat dry with paper towels.  In a small bowl combine, salt, pepper and garlic powder.  Thoroughly coat chicken inside and out with seasoning mixture.  Stuff the cavity with garlic head, half the onion, half the fennel, rosemary and thyme.  Place into roasting pan.
  3. Into the bottom of the roasting pan, add the remaining onion, fennel and chicken stock.
  4. Place into oven and roast until the chicken is golden brown, an instant-read thermometer reads 165 degrees F and the juices run clear, about 1 hour and 30 minutes.  Allow to rest for 20 minutes before carving.
