Deliciously moist, chocolatey, flavorful from warm spices such as cinnamon and nutmeg, and finally drizzled with more chocolate, this Chocolate Chunk Zucchini Bread will have even the pickiest eaters going back for a second slice!
Ingredients
1 1/2 cups White Whole Wheat Flour
1/2 Tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 egg, lightly beaten
1 1/2 cups zucchini, unpeeled and shredded
1 cup sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 cup dark chocolate chunks, divided
1/3 cup walnuts, chopped
Instructions
Preheat oven to 350 degrees
Grease the bottom and all four sides of a loaf pan and set aside
In a medium bowl, stir together flour, baking powder, cinnamon, nutmeg and salt.
In another medium bowl, stir together egg, zucchini, sugar, applesauce and vanilla.
Make a well in the flour mixture and pour wet ingredients into the well.
Mix together just until combined.
Stir in 3/4 cup dark chocolate chunks and walnuts
Pour batter into prepared pan.
Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
When the loaf is finished backing, allow to cool in pan for 20 minutes and then carefully remove from pan and allow to cool on a wire rack for an hour.
When the loaf if cooled, in a microwave safe bowl, melt remaining chocolate chunks in 30 second intervals until completely melted.
Drizzle over the top of the bread and allow to set for 30 mins.
Slice and enjoy!
