Now you can have an ice cream sundae for breakfast.  Banana Split Pancakes have all the flavors you love of the classic ice cream treat, in breakfast form!

Ingredients

Instructions

  1. Into a medium bowl, combine flours, through salt and set aside.
  2. In another bowl, combine eggs through stevia.  
  3. Make a well into the dry ingredients and pour in wet batter.
  4. Stir until just combined (over mixing will result in tough pancakes.  Lumps are ok!)
  5. Preheat a griddle and spray with cooking spray.
  6. For each pancake, place 1/4 cup batter onto hot griddle.  Place 4 slices of bananas onto each.  When bubbles start to form, flip over and cook for an additional minute.
  7. For serving:  Place 2 pancakes onto a place and top with desired toppings.  We used diced strawberries, sugar free chocolate syrup, sugar free whipped topping and chopped peanuts to make authentic banana split pancakes.
