Nachos for breakfast?!  Absolutely! Especially when they’re the B.E.S.T Breakfast Nachos; Bacon, Egg, Sausage and Tomato all topped on waffle fries for the ultimate in breakfast satisfaction!

The B.E.S.T Breakfast Nachos

Spring is almost here can you even believe it?  I’m still stunned its March 1st but I’m so very excited.  I truly love Spring, mostly because I know summer is coming, but Spring is the time when the flowers start to bloom, the sun is shining longer and the birds are singing outside my window while I sleep.

My daughter is super excited for Easter this year and has been asking daily if it’s Easter yet.  I’m not sure if she’s more excited to hunt for eggs, wear her new dress or eat our lavish brunch after church on Easter morning.  Either way, I’m excited too, little one.

Speaking of brunch, is there anything better?  I mean there’s a huge spread of breakfast type foods and lunch foods so you can eat until you need a nap.  My family loves breakfast foods. Nothing gets my kids (and husband’s) butts out of bed quicker than when I’m making sausage…or bacon for that matter.

Whoever thought of the whole brunch idea is genius.  Now you never have to decide if it’s too early for lunch.  I also think I’m pretty genius for combining breakfast and nachos to give you the B.E.S.T Breakfast Nachos ever!

We often have B.F.D. Breakfast for dinner because breakfast is delicious and my kids will never turn up their nose at pancakes.  Breakfast foods are simple, easy and quick.  Throw some eggs into a pan, whisk up some batter for pancakes or waffles and cook some sausage patties and call it dinner.

The B.E.S.T Breakfast Nachos

I always have sausage on hand, always.  I put sausage into our hamburgers, meat sauce for spaghetti and use it often for breakfast casseroles.  Our preferred brand is Odom’s Tennessee Pride® Country Sausage in a Roll.  I pick it up at Walmart.  For these B.E.S.T Breakfast Nachos I used the mild kind as my kids were also eating them but if it were just my husband and I, I would have gotten the hot variety.

The B.E.S.T Breakfast Nachos

These breakfast nachos combine all of your favorite breakfast foods piled high on top of waffle fries.  I mean does it get any better than that?!  You can choose whatever you want on your nachos but the sausage is a must!

The whole dinner came together in 25 minutes, the time it took to cook the fries in the oven.  While the fries cooked, I browned the sausage,  I scrambled the eggs and chop the ingredients.

Mmm…every nacho had a little bit of sausage, egg, cheese, cilantro and tomato.  I served Greek yogurt mixed with chili powder, on the side, which was delicious and still fit the theme of breakfast with yogurt.

My kids and husband devoured this and I’ve already put them on the menu plan for next week and Easter brunch.  I mean, who wouldn’t love nachos for breakfast?!

The B.E.S.T Breakfast Nachos

Nachos for breakfast?!  Absolutely! Especially when they’re the B.E.S.T Breakfast Nachos; Bacon, Egg, Sausage and Tomato all topped on waffle fries for the ultimate in breakfast satisfaction!

Ingredients

24 ounces Waffles Fries

3 eggs

2 Tablespoons milk

salt and pepper

1lb Odom Tennessee Pride Mild Sausage

4 slices bacon

1 tablespoon butter

2 roma tomatoes

1/2 cup Monterrey Jack Cheese, divided

1/2 cup Smoked Gruyere Cheese, divided

Optional toppings; avocado, jalapenos, cilantro, sour cream, Greek Yogurt

Instructions

Preheat oven to 400° and cook waffles fries according to package directions.

In a medium bowl, place eggs, milk, salt and pepper and whisk to combine.  Set aside.

Meanwhile brown sausage in a cast iron pan.  When browned transfer to plate.

In same pan, cook bacon until crispy.  Place on paper towel to drain.

Reserve some of the bacon grease and add 1 tablespoon butter, to pan.  When butter is melted, add eggs and scramble to desired consistency.  (We like ours on the wet side)

Chop tomatoes and set aside.

When the fries are done cooking, add 1/2 cup of cheese. Place back into the oven until cheese melted.

Transfer cheesy fries to platter and start to layer; sausage, eggs, bacon, cheese and optional toppings.

Serve warm with additional topping of choice.  We dipped ours in a mixture of Greek yogurt and a dash of chili powder.

Notes

*We didn't end up using the entire 1lb of sausage, so I reserved about half to make a breakfast casserole the next day.

If I were you, I would make the B.E.S.T Breakfast Nachos for dinner tonight.  I would even make them for brunch this weekend and for brunch on Easter morning.  They are that good.

    I could so Eat Nachos for breakfast. As a matter of fact I think I actually have. I’m ready for the Spring as well even though we’ve had unseasonable warm weather this year. You really have me wanting Nachos for dinner now 🙂

    I’m saddened by the fact that I’ve never heard of breakfast nachos before. 41 years of life wasted! LOL. Seriously though, where have these been all my life? I have pinned the recipe to my own personal secret board for later use. I can’t wait to make a large batch of these this summer for a friends and family balcony brunch. YUM!

    That sounds like such a fab idea to serve Nacho’s for breakfast. I’ve never tried Tennessee Pride sausages but they sound so good. Will look for them next time I’m at store.
