In our circle of friends, we all love a good tailgate. The reasons from person to person differ ranging from food, drinks and the actual game. I probably don’t have to tell you which I prefer. In the past decade that I have been out of college (BAH!) our food game has been upped. No longer do we just grill plain ole hot dogs and hamburgers, grab a few bags of chips and a snag a few cases of $9.99 beer. Oh no, it’s tailgate time which means we bring it.
These days you can find us at our alma mater, cheering on the Redbirds, drinking sangria, craft beer and feasting on Short Rib Sandwiches. These days we need sustenance in our lives so we can wake up to our children the next morning. Long gone are the days of 12 hour hangovers, so we need something that is going to taste amazing and help us power through whatever life throws at us. Goodbye naps.
When we were in college, it was easy to head down to the parking lot, grab a spot and set up “tailgate shop.” These days we all have kids, schedules and too much baggage to carry to a football game. So when we can’t make it to a game, or the parking lots are full, we tailgate at home. We set up our neighbors garage with a bar, food station and turn the TV to football. Saturday is college game day and on Sundays we watch the professionals. There is no shortage of game day around here.
I love to tailgate at home just as much as I love attending the tailgate at the actual game. Sometimes I feel as though it’s less hassle trying to round everyone and everything up and head out the door at a decent time to get just the right spot. Plus I really love a good slow cooker meal and having to find a place to plug-in and bringing extension cords just ain’t my thing.
Luckily, these Short Rib Sandwiches stay warm for a long time and get eaten immediately so if you are attending the parking lot party, these will keep warm for a while. But if you are tailgating at home, just plug this baby in and the meat will continue to get tender.

When tailgating, I love to bring a variety of sauces for people to dress up their dishes as I’m not sure what everyone palate’s are. That is why I like El Yucateco® so much as they have hot sauces ranging from hot to XXX Hot. I was able to find a few sauces at my local Jewel.
These Short Rib Sandwiches are perfect for game day. All you need to do is throw some beef short ribs into your slow cooker with El Yucateco® Red Habanero Hot Sauce, some onions and garlic, beef broth, Worcestershire sauce, soy sauce and in 6 hours, you’re good to go. We stuff ours into bollilo rolls piled high with pepperjack cheese, banana peppers and extra hot sauce.
Everyone raves about these sandwiches and for good reason. They’re AMAZING! The short ribs fall off the bone. They’re juicy and super tender. These are our go to sandwiches for tailgating, homegating and Sunday dinners. They’re hearty, delicious and packed with so much flavor, no one can resist. Just make sure to make a double batch and bring a few extras bottles of El Yucateco® hot sauce, in your purse.
- 3.5 lbs beef short ribs
- kosher salt
- 1 tablespoon olive oil
- 2 white onion, roughly chopped
- 3 garlic cloves, smashed
- 4 cups beef stock
- ¼ cup El Yucateco® Red Habanero Hot Sauce
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon soy sauce
- 4 bolillo rolls
- 1 cup pepper jack cheese, shredded
- Banana peppers, El Yucateco® hot sauce, if desired
- Generously salt all sides of beef short ribs.
- In a cast iron pan, set over medium high, heat oil.
- Saute short ribs, on all sides, until browned. (Do not over crowd, do this step in batches if need be)
- Place browned short ribs into the bottom of the slow cooker and add onions through soy sauce.
- Set your slow cooker to high and cook for 6 hours.
- After 6 hours, remove short ribs and when cooled down enough to handle, remove bones and shred meat.
- Strain the juices from the slow cooker, reserving ⅔ cup.
- Place meat and juices back into slow cooker and set to low to reheat for serving.
- Slice open bolillo rolls, pile meat on high, top with shredded cheese, banana peppers and additional hot sauce.
Do you just see the flavor falling out of those babies?! You could pile the meat high onto nachos or stuff them in tortillas. You could use a Mexican cheese like Chihuahua or a meltier cheese like fontina. Anyway you make these sandwiches, they’ll be a hit with your tailgating buddies. Just don’t forget the El Yucateco® hot sauce.
