Puppy Chow Truffles

Creamy with a little bit of crunch, Peter Pan® Simply Ground Peanut Butter works beautifully in these Puppy Chow Truffles. Peanut butter balls dipped in chocolate and rolled in powdered sugar are the perfect treat to pass out to all your friends, family and coworkers this holiday season.
Ingredients
- 1 jar, 15 ounces, Peter Pan® Simply Ground Peanut Butter
- 1/2 cup butter, softened
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 1/2 cups powdered sugar, divided
- 12 ounces semi sweet chocolate
- 1 teaspoon coconut oil, optional
Instructions
- Add your peanut butter, butter, salt and vanilla to the bowl of your stand mixer fitted with the paddle attachment. Mix until combined.
- Slowly, add in your 2 cups of powdered sugar, 1 cup at a time making sure the first cup is incorporated before adding in the next.
- Form mixture into balls and place into freezer for 1 hour.
- In a double boiler or microwave, careful not to burn, melt chocolate with coconut oil, if desired.
- Removing 1 ball at a time from freezer, dip 3/4 of peanut butter ball into chocolate mixture.
- Place on parchment paper and when all balls have been rolled, place back into freezer for 1 hour.
- After 1 hour, roll balls in powdered sugar.
Notes
*I use a skewer to dip the balls into the chocolate so I have a better grip rather than using a toothpick.
