Quick and delicious, this Grilled Vegetable Quinoa Salad is a packed with hearty grilled vegetables and quinoa making it a great side dish, snack or meal.
Ingredients
Lemon vinaigrette
1/3 cup extra virgin olive oil
1 teaspoon Dijon mustard
Juice of 1 lemon
Freshly ground black pepper
Kosher salt
Grilled Vegetable Quinoa Salad
2 packages Minute® Ready to Serve White & Red Quinoa
1 zucchini, cut in half lengthwise and sliced into thin planks
1 yellow squash, cut in half lengthwise and sliced into thin planks
1 red onion, quartered
1 red bell pepper, seeded and quartered
1 yellow bell pepper, seeded and quartered
2 tablespoons extra virgin olive oil
4 ounces feta cheese, crumbled
2 tablespoons mint, finely chopped
Instructions
In a mason jar, combine all ingredients for lemon vinaigrette dressing and shake to combine. Set aside.
Preheat your grill or a grill pan over medium high heat.
Place all vegetables onto a cookie sheet and drizzle oil olive, salt and pepper onto the vegetables. Toss to evenly coat.
In batches, start to grill your vegetables until tender and charred, about 10 minutes total
When cooled, place onto a cutting board and diced into 1-1/2 inch pieces. Place all vegetables into a bowl.
Place 2 cups Minute® Ready to Serve White & Red Quinoa into the microwave and cook. Then repeat with 2 more cups.
Place Minute Ready to Serve White & Red Quinoa into bowl with vegetables and pour on dressing. Toss to combine.
Sprinkle feta cheese and mint on top of salad and lightly toss a few times until everything is incorporated.
